I was reading the back of this vegan butter and the first ingredient was cocoa butter. I thought that was really interesting and the chocolate cake came to mind. I remembered having the best chocolate cookies at a bakery I used to frequent that were vegan so that’s probably where the inspiration came from. They were truly the best cookies ever!

For this chocolate cake I went all out I used the best-powdered chocolate and chocolate chips I could find. The best vegan butter I could get, and the time it deserved because this is a really big cake. This super-decent cake holds nothing back. TIPS & TRICKS FOR THE BEST VEGAN DARK CHOCOLATE  CAKE

coffee: coffee in baking anything chocolate is pretty much essential. adding water is a missed flavor opportunity. coffee round out the cocoa making it taste full-bodied. and the little pinch of salt boosts the flavor up. use your favorite drinking coffee. but keep it to a plain flavor those artificially flavored coffee can throw off the cake and they tend to be weaker.

thin non-dairy milk: there is a wide range of non-dairy milk. oat milk tends to be the thickest. although delicious it isn’t the best milk for the job. use your favorite milk that similar to the consistency of regular dairy milk and you’ll be fine.

flax seeds: flax seeds are essential in this, and no you won’t even know they are there. honestly, i totally forgot this cake had flax in till i looked at my notes and remembered. the flax needs to go in as soon as possible with the butter and oil. so it’s evenly dispersed. coating the flax in the butter/oil sorta delays the bloom till you can get the cake in the oven. measurements are based on ground flax, not whole flax that is then ground.

vegan butter with cocoa: there are a lot of vegan butter out there for this recipe i used forA butter its bulk oil is cocoa which pairs great with chocolate additions so look for something similar or just use your favorite butter.

INGREDIENTS

  • BATTER
  • 2c All Purpose Flour
  • 3c White Sugar
  • 1.5c Unsweetened Dark Chocolate Powder
  • 1tsp Salt
  • 4Tb Flax Seed, ground
  • 2tsp Baking Powder
  • (4oz) 1/2c Vegan Butter + 2 Tb Vegetable Oil
  • 1Tb Vanilla Extract
  • 1c Coffee
  • 3c Non Dairy Milk
  • 1/2c Non Dairy Dark Chocolate Chips
  • FROSTING
  • (8oz) Vegan Butter, softened
  • 7-9c Powdered Sugar
  • 1Tb Vanilla Extract
  • 1/4-1/2c Non Dairy Milk

INSTRUCTIONS

  • Start off by creaming the vegan butter, sugar, and vegetable oil with an electric mixer.
  • Once its doubled in size add in flax seeds, salt, and baking powder.
  • Add in dark chocolate powder. Add in both milk and coffee along with the flour. Gently mix till everything is combined. Using a rubber spatula fold in chocolate chips.
  • Spray your cake pan with non stick cooking spray. Evenly fill two cake pan with half of the batter each. Bake at 350F for 45-50 minutes. While the cake cools to the touch make the frosting.
  • To make the frosting start off by adding the butter, 7c powdered sugar, vanilla and 1/4c non dairy milk. whip with a hand mixer. till the frosting is nice and fluffy. Scrap the sides of the bowl and taste if it needs to be sweeter add more icing if its too tight add in more milk.
