Tortillas: Tortillas make great wrappers. Once fried in the butter it gives the tortilla a ton of flavor and crunch. Stuff it with anything the possibilities are endless.
Cheese: Use whatever cheese blends are on hand. For this recipe, i used mozzarella, parmesan and asiago. Toss all the cheese together to have the blend all ready.
Marinara: A quick marinara is all you need. Whether to dip or stuff it inside marinara is a must. A tangy marinara helps hold the pockets together.
Meatballs and Pepperoni: Meatballs are great to keep on hand they make a great addition to these pizza pockets or even salad. Pepperoni is a great refrigerator staple since it requires no extra prep.
large tortillas: large tortillas are the best option for these quick pockets. frying the dough in butter really helps the overall feel of making them like a pizza.
fill it with anything: whatever your favorite pizza toppings are add it in here. this recipe is all about being quick and using what you have on hand. you cant really overstuff these and they make a great snack. if it can go on a pizza it can go in these.
fry it in butter: butter makes all the difference so don’t skip it here. frying the pockets in butter makes it more pizza-y. the butter also acts as a little bit of glue to stick the dusting of parmesan and peppers on the outside. you can always add a splash of olive oil to the butter if you need the addition of extra fat.
toppings: the final dusting of parmesan and peppers like a regular pizza is the final touch. don’t skip this cheesy step.
