Avocado and mayo are similar they both are creamy fixtures.that add some cooling, coloring and body to the dish. Mash the avocado prior to making the dressing for a smoother finish.
Wasabi is type of horseradish that’s similar to the mustard family, that’s ultra pungent. Wasabi is a delicate heat that can really help out your sinuses so use sparingly.
Pasta salad works best with small noodles, so that you can get a number of ingredients in one bite. The thing I love about using small elbows is the hole through the middle makes for a great place for extra sauce.
Cucumbers, celery, and green onions add freshness and a nice contrasting crunch to the soft pasta and the creamy dressing. Use as much or as little of each ingredients. Make sure they are all cut into consistent bite sized pieces.
Lime adds two things to the dish, It adds a nice tang but it also keeps the avocado from turning brown. Cilantro adds some freshness to the creamy sauce.
to make sure the dressing is super creamy start with the avocados, if you’re making the dressing by hand make sure to mash the avocado first. mashing the avocado before adding in all the additional ingredients makes sure you get the avocado to your desired consistency.
the addition of jalapeno with the ribs and seeds removed adds a fresh heat to the dish. wasabi adds a lingering zest that is best done in moderation.
when assembling the pasta salad it’s best if you wait until the pasta is cooled completely, that way the residual heat doesn’t turn the avocado brown.. cover the pasta salad till ready to serve to keep the dish bright.
