Nectarines
The star of the show, fresh nectarines provide a juicy, sweet, and slightly tart base. Their vibrant color and tender texture, especially when slightly warmed, are essential to the “cobbler” experience.
Brown Sugar
A touch of brown sugar complements the nectarines. It adds a deeper, caramel-like sweetness. This sugar helps to create that familiar cobbler richness. Its molasses notes pair beautifully with the fruit and oats.
Oats
Rolled oats form the “cobbler” topping. When prepared, they offer a hearty and comforting texture, mimicking the crumble of a traditional cobbler. Oats are also an excellent source of fiber, adding a healthy boost to this dish.
Greek Yogurt
Creamy Greek yogurt serves as the perfect tangy counterpoint to the sweetness of the fruit and oats. It adds a protein punch, making the bowl more substantial. The yogurt is satisfying. Its cool temperature provides a refreshing contrast to the warm elements.
TIPS & TRICKS FOR THE BEST NECTARINE BROWN SUGAR OAT YOGURT BOWL
What to do with a lot of nectarines
If you have a surplus of nectarines store them in a freezer for easy use throughout the year. Nectarines freeze like peaches or any other fruit. Simply, slice the fruit around the pit and store in freezer safe bags. Don’t pack the bags too large since the fruit will compact due to the juice from the nectarines. Lay the bags flat and stack the laid out till completely frozen then you can break the nectarines apart.
Can you make this with peaches?
Absolutely! Peaches are an excellent substitute for nectarines in this recipe. Both fruits offer a similar sweetness and texture when cooked, and their juicy nature complements the oat cobbler topping beautifully. You can use fresh, ripe peaches, peeled and sliced, just as you would with nectarines. If using frozen peaches, ensure they are thawed and any excess liquid is drained before incorporating them into the recipe.
Can you use other yogurt?
Greek yogurt is recommended for its thick, creamy texture. It provides a tangy counterpoint to the sweet fruit and cobbler. However, you can certainly experiment with other types of yogurt.
- Regular plain yogurt: This will work, but the consistency will be thinner. If you use regular yogurt, you might consider draining some of the liquid (whey) from it beforehand. Alternatively, reduce the amount of liquid added to the fruit mixture to prevent the bowl from becoming too runny.
- Dairy-free yogurt: For a dairy-free option, unsweetened almond, coconut, or soy yogurt can be used. Be mindful of their individual flavors, as some dairy-free yogurts can have a more pronounced taste that might alter the overall profile of the dish. Opt for a plain, unsweetened variety to best mimic the neutrality of Greek yogurt.
- Flavored yogurt: While possible, using flavored yogurt will make the dish overly sweet or introduce competing flavors. If you do opt for a flavored yogurt, choose one that complements the fruit, such as vanilla or a subtle fruit flavor.
Can you add more spice or sugar?
Yes, you can absolutely customize the amount of spice and sugar to suit your personal preference.
Common spices that pair well with nectarines (and peaches) include cinnamon, nutmeg, and a hint of cardamom. Start with a small additional amount (e.g., 1/4 teaspoon of cinnamon) and taste as you go. You can also experiment with a pinch of ginger for a warmer, spicier kick.
The sweetness of the dish will depend on the ripeness of your fruit and your individual taste. If you prefer a sweeter cobbler, you can add more sugar to the fruit mixture or to the cobbler topping. You can use granulated sugar, brown sugar, maple syrup, or honey. Remember that the syrup glaze over the nectarines already provides sweetness, so add extra sugar incrementally.
Serving Suggestions
This nectarine oat cobbler bowl is incredibly versatile in how it can be served.
- Warm: For a comforting and delightful experience, serve the cobbler bowls warm, especially with the cool Greek yogurt on top. The contrast in temperatures is truly enjoyable.
- Chilled: This dish also holds up beautifully when chilled, making it an excellent make-ahead option for breakfast or a healthy dessert.
- Toppings: Beyond the Greek yogurt, consider adding other toppings for extra texture and flavor. A drizzle of honey or maple syrup, a sprinkle of chopped nuts (pecans, walnuts, almonds), a dollop of whipped cream, or a handful of fresh berries can elevate the dish.
- Make-Ahead: You can make and combine most of this recipe ahead of time, which is perfect for busy mornings or meal prepping. Prepare the nectarine mixture and the oat cobbler topping separately. When ready to serve, gently reheat the nectarine mixture (if desired) and assemble with fresh Greek yogurt and the prepared cobbler topping.
Important Tip for the Syrup Glaze
When reducing the syrup glaze over the nectarines, exercise caution and do not over-reduce it. The goal is a syrupy glaze, not a hardened candy. If you reduce the sugar to a caramel stage, it will seize (harden) when added to the cold Greek yogurt. This will create an undesirable texture. Keep the glaze pourable and slightly viscous to ensure it integrates smoothly with the yogurt.
