Typically with tres leches cake you’re working with a buttery sponge cake. The cake is soaked in three milks. The milk soaks into the cake resulting in a creamy, rich sponge. For this recipe the ingredients and the idea is the same you’re just making pancakes. The pancakes absorbs the milk similarly to a sponge cake which is then layered with cream and berries.
Whipped cream is light, airy and rich. It offers another note of sweetness that is perfect with the milks and fresh berries.
Strawberries, pineapple, mango and black or blueberries all work great layered between these pancakes. Use whatever fruit you have on hand this dish is super versatile.
No need for anything special or fancy ingredients at all. Use your favorite homemade or boxed pancake mix when making this recipe. If you want to give your arms a rest from whipping heavy cream, reddi whip makes for a great whipped cream substitute.
making this recipe ahead is super simple. all you need to do is make the pancakes ahead of time and when you’re ready to soak them in the milks they are ready to go. you can also make this recipe using leftover pancakes just rip and tear them so they fit in layers. you can also prepare this entire dish ahead of time and refrigerate the entire parfait for an even easier breakfast or late night treat
pancakes can absorb alot of liquid. allow the pancakes to cool prior to soaking and building. you want to initially drizzle the pancake with the milks prior to stacking to ensure each bite has all the layered milky goodness. just don’t drench them or they can start to break apart. a final drizzle to coat the entire parfait add the perfect amount of moisture.
this recipe can be made with full sized pancakes too! just drizzle them with the milk the glass layering may not be an option, instead prepare it on a plate. for these parfaits it is best to keep them silver dollar (1-2Tb) sized for the best layering effect. alternatively, you can also use full sized pancakes or leftover pancakes just cut up.
