Typically with tres leches cake you’re working with a buttery sponge cake. The cake is soaked in three milks. The milk soaks into the cake resulting in a creamy, rich sponge. For this recipe the ingredients and the idea is the same you’re just making pancakes. The pancakes absorbs the milk similarly to a sponge cake which is then layered with cream and berries.

Whipped Cream

Whipped cream is light, airy and rich. It offers another note of sweetness that is perfect with the milks and fresh berries.

Fruit

Strawberries, pineapple, mango and black or blueberries all work great layered between these pancakes. Use  whatever fruit you have on hand this dish is super versatile.

pancakes can absorb alot of liquid. allow the pancakes to cool prior to soaking and building. you want to initially drizzle the pancake with the milks prior to stacking to ensure each bite has all the layered milky goodness. just don’t drench them or they can start to break apart. a final drizzle to coat the entire parfait add the perfect amount of moisture.

this recipe can be made with full sized pancakes too! just drizzle them with the milk the glass layering may not be an option, instead prepare it on a plate. for these parfaits it is best to keep them silver dollar (1-2Tb) sized for the best layering effect. alternatively, you can also use full sized pancakes or leftover pancakes just cut up.

INGREDIENTS

  • Butter
  • Cooking Oil
  • FOR THE MINI PANCAKES:
  • 2c Pancake Mix
  • 1 1/3c Milk
  • 2tsp Vanilla
  • FOR THE TRES LECHES
  • 3/4c Sweet and Condensed Milk
  • 1/2c Evaporated Milk
  • 1/4c Half and Half
  • 1Tb Vanilla
  • FOR THE LAYERING:
  • 1-2c Whipped Cream
  • 1 Mango, peeled and cubed
  • 6oz Blackberries, fresh
  • Maraschino Cherries

INSTRUCTIONS

  • Make your mini pancakes according to your package instructions for the ratios of mix to water/milk just add the vanilla to the mix.
  • Mix together to form the batter.
  • Combine all the milks listed under tres leches into a measuring cup. Then chill till ready to pour.
  • Using a ratio of 1:1 butter and oil add one tablespoon of both to a pan over medium heat.
  • Once the butter is melted add in 5-6 one tablespoon sized pancakes to the pan.
  • Once the pancakes start to bubble, flip them, allow them to cook for 30 more seconds then remove them from the pan.
  • Continue again till all the pancakes are complete. Use butter and oil as needed.
  • Once the pancakes are complete. Allow them to cool for 5 minutes.
  • Once cooled drizzle with half of the milk mixture.
  • Start building by place an even layer of silver dollar pancakes at the base, drizzle with milks, spray on a layer of whipped cream and add on fresh berries.
  • Continue the layering process till all the pancakes are used. Complete the last layer with a generous amount of whipped cream, and fresh berries. Chill and serve or eat immediately!
