Taco Truck Green Sauce

Just like your favorite taco trucks! Lightly simmered onions, jalapenos, and garlic blended into a spicy and creamy green sauce.

My journey began many years ago when I just had to recreate ” that green sauce” from my favorite taco truck. A lot of sleuthing had to take place for this recipe to happen. I had to try many taco trucks. Deep dive into a lot of recipes hoping someone would have the recipe I was looking for. At the time I couldn’t find a recipe anywhere so I had to make my own and I’ve been making this recipe every since! I frequent many food trucks. I love the convenience and supporting local business. Plus who can resist that big hunk of beef roasting in the window that they slice and fry on a flat top for carnitas. This sauce is the sauce I generally get it usually is served in a Ziploc bag that is tied with the ends cut served next to a baggie of limes. Its seriously the best stuff out there. TIPS & TRICKS FOR THE BEST GREEN SAUCE:

don’t over boil your veg: you boil the vegetables to tame the aggressiveness of the raw onions, garlic and jalapenos. but don’t over boil them. It’s basically a quick blanch and everything comes out.

add in oil slowly: when you start blending the vegetables will start to release their natural pectin to help solidify the sauce. this is a stable emulsion so i can break if not properly combines. slow and steady similar to making a hollandaise.

season to taste: this seems obvious but since this sauce is so produce driven it can vary. so adjust the vinger and salt to taste.

let it settle: the sauce will have some bite the first day so if its too spicy or garlicky let it sit overnight to tame.

INGREDIENTS

  • 1-2 Jalapeno, seeded optional
  • 1 Yellow Onion
  • 5 Garlic Cloves
  • Salt
  • Cilantro
  • 1tsp White Vinegar
  • 1/2-3/4c Canola Oil

DIRECTIONS:

  • BOIL VEG: Add all vegetables to the pan and add enough water to cover. bring to a boil and let simmer for 2 minutes.
  • ADD TO A BLENDER: Remove from the water and add vegetables to blender. Add in cilantro, vinegar and a dash or salt.
  • DRIP IN OIL: Blend the initial veg for 30 seconds before you start dripping in oil. Do it slowly gradually upping the speed of the blender. Once all the oil is gone. Adjust seasoning and serve.
