I love turkey necks, they are so underrated. I wasn’t raised on them, someone made them for me once and I was hooked ever since. It scratches the itch for turkey when you don’t feel like dealing with a giant whole bird, And they are an easier cut to find year-round that isn’t already precooked or smoked.

Since I had the smoker going I decided last minute to throw these in. Generally, when I make this recipe I roast the turkey necks. This recipe is easy. it makes a comforting, hearty, one-pot dish.

For this recipe, I did a classic herb seasoning in a hickory-filled smoker I cooked it long enough for the smoke to permeate the entirety of the meat. Following it up in the oven with the addition of veggies, rice and beans this dish comes together simply.

TIPS & TRICKS FOR THE BEST SMOKED TURKEY NECKS + REC BEANS & RICE

after the smoker: once you remove the turkey necks from the smoker. i like to roast them in a splash of broth and butter in a dutch oven. to rehydrate them and to start building more flavor. once the turkey is pull-apart tender is when you add the veggies, rice, and beans to finish the cooking.

roast them: loading up an entire smoker can be a lot. in lieu of that roast them in the oven. rub with the same rub listed below, roast them in the oven until they are golden brown and fork-tender. drain the excess fat that will accumulate before starting the final steps. add the chopped veggies in once the turkey is cooked. then follow the remaining steps provided.

small cuts: cut the vegetables small. small vegetables will cook around the same time as the rice and beans. resulting in some mild crunch without them being completely broken down.

more time: expect your rice cook time to be doubled. you’ll know the rice is done when all the water is absorbed and the rice is fluffy. add the correct ratios of water to rice according to your package instructions.

season: every step of this recipe needs to be seasoned. add seasoning and salt into the rice and beans prior to being fully cooked. seasoning afterward may cause you to mash up the rice.

INGREDIENTS

  • SMOKED TURKEY
  • 4lb Smoked Turkey Necks
  • 1/2c White Wine + 3TB Butter
  • SEASONING
  • 2TB Garlic Powder
  • 1TB Black Pepper
  • 2tsp Salt
  • 2tsp Thyme
  • 1tsp Rosemary
  • 2tsp Paprika
  • 1tsp Onion Powder
  • 2Bay Leaves, crushed
  • RED BEANS & RICE
  • 2TB Butter
  • 1 Yellow Onions, small diced
  • 8 Garlic Cloves, minced
  • 2 Celery, small diced
  • 15oz Red Beans, canned and drained
  • 2c Jasmine Rice
  • 3c Water
  • 2Tb Chicken Bouillon Powder
  • 2tsp Garlic Powder
  • 2tsp Black Pepper
  • 1tsp Salt
  • 1TB Browning Seasoning.

INSTRUCTIONS

  • Season turkey necks with ingredients listed under seasoning.
  • Smoke the turkey necks in hickory smoke for 4-6 hours at 220 F.
  • Finish the turkey necks in a Dutch oven followed by wine and butter. Bake covered for 40minutes to a hour at 370F. Turkey meat should be tender.
  • Once the turkey is roasted add in vegetables then toss. Season lightly with salt.
  • Combine the browning, water and chicken bouillon.
  • Toss in the red beans, rice, garlic powder, black pepper and salt all together then stir into the pot. Fill with water add in butter. Cover and bake for 30-40 minutes. Until rice is absorbed and fluffy
