Controlling the Jalapeno flavor

Blister the jalapeño until it is blackened on every side for the deepest smoky flavor. The more you middle the jalapeño the more intense the heat will be. Remove the seeds completely for no heat just subtle smoke or keep the seeds but just chop the jalapeño in half for a more mild heat. 

Reducing the Syrup 

Do not over reduce the syrup. Reducing by about one quarter concentrates the flavor without making the tea overly sweet. Steep the tea only after removing the saucepan from the heat to prevent bitterness.

Other sugar options

If you prefer an alternative to white sugar, you can choose from other options such as agave or coconut sugar. You can use whatever sugar you prefer or replace it with a heat-stable sugar substitute that is suitable for your specific dietary needs.

Inclusive Adaptions

Lower Heat Option

For anyone sensitive to spicy foods, remove the seeds and white membrane from the jalapeño before blistering or use only half of the pepper. You will still get the smoky roasted flavor with a much gentler finish.

Lower Sugar Option

Replace the white sugar with your favorite heat stable granulated sweetener alternative. This keeps the tea sweet while making it more suitable for those monitoring their sugar intake.

Jalapeño Sweet Heat Iced Tea

Ingredients
  

  • 1 blistered jalapeño
  • 1 cup white sugar
  • 64 ounces water
  • 4 black tea bags
  • 1 tablespoon apple cider vinegar

Equipment

  • Sheet pan
  • Saucepan
  • Measuring cups
  • Measuring spoons
  • Fine mesh strainer
  • Glass pitcher or mason jar

Method
 

  1. Place the jalapeño on a sheet pan and broil for about 5 minutes, turning as needed, until blistered and blackened on all sides.
  2. Add the blistered jalapeño, sugar, and water to a saucepan.
  3. Bring to a boil until the sugar has completely dissolved.
  4. Reduce the liquid by about one quarter.
  5. Remove the saucepan from the heat and add the black tea bags.
  6. Steep for 20 minutes.
  7. Strain out the jalapeño and tea bags.
  8. Stir in the apple cider vinegar.
  9. Transfer to a glass pitcher or mason jars and chill before serving over ice.
