Pressing the Tofu

Simply let the tofu drain for five minutes before spreading on the mustard layer. Additionally, observing how much the block shrinks serves as a helpful gauge for measuring smoke absorption.

Poke the tofu before seasoning

Make the five small openings all the way through the tofu, one near each corner and one through the center. These openings give the smoke additional paths into the tofu while it cooks. Rub the mustard over the entire block, including the edges. The mustard acts as both a flavor layer and a binder for the seasoning.

Season immediately after adding the mustard

The seasoning will stick best while the mustard is still wet. Press the seasoning gently onto the tofu instead of brushing it away.

Keep the smoker at 225°F

A steady low temperature gives the tofu time to absorb the smoky flavor without drying out too quickly.

Wrap after smoking

Blackened Smoked Tofu

This blackened smoked tofu is for when tofu needs to bring some serious flavor to the table. Ingredients
  

  • 14 oz block extra-firm tofu
  • 2 tablespoons brown mustard
  • 1/2 tsp Bouillon powder chicken
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon ground thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 teaspoon sea salt

Method
 

  1. Prepare the tofu
  2. Remove the tofu from its packaging and drain.
  3. Prepare the seasoning
  4. Add the cayenne, celery seed, ground thyme, garlic powder, onion powder, and sea salt to a small bowl. Mix thoroughly until the seasoning is evenly combined.
  5. Poke the tofu
  6. Using a toothpick, poke the tofu completely through once near each corner and once through the center. These five openings help the smoke penetrate deeper into the tofu.
  7. Add the mustard
  8. Rub the brown mustard over every surface of the tofu, including the top, bottom, and sides.
  9. Season the tofu
  10. Coat all sides of the mustard-covered tofu with the seasoning mixture. Gently press the seasoning onto the surface so it adheres evenly.
  11. Smoke the tofu
  12. Place the seasoned tofu in a smoker set to 225°F. Smoke for 2 hours, keeping the smoker temperature as consistent as possible.
  13. Wrap the tofu
  14. Remove the tofu from the smoker and immediately wrap it tightly in aluminum foil to keep the smoke contained.
  15. Rest
  16. Allow the wrapped tofu to rest for 1 hour before slicing.
