Teriyaki sauce is a great sauce to have on hand. You can quickly stir fry veggies, noodles, or your choice of meat. It’s a sticky and sweet soy-based sauce that works well with literally anything. Also, it’s super easy to make! With less than 10 ingredients you can have this sauce ready to use in 15 or make it ahead and keep it in the fridge.
I changed up the traditional teriyaki ingredients with a few new items for my teriyaki sauce for this recipe. I use fresh ingredients since I use the blender to make it smooth anyway. That way everything is fuller, louder, and more flavorful. I used black garlic in this dish to lend its sweet fermented flavor. The garlic paired with the soy sauce has an incredible umami flavor that makes this stuff addicting!

TIPS & TRICKS FOR THE BEST BLACK GARLIC TERIYAKI SAUCE
white garlic is fine: black garlic can be hard to find. or if you’re like me you have an overabundance and need to use it up. black garlic is fermented so it lends a mellow sweetness and earthiness to the dish similar to a dried mushroom powder. swap out the black garlic with a little mushroom powder or just use regular in the same measurements.
corn starch + cold water: corn starch needs to be blended in cold liquids to incorporate into a dish. when you add cornstarch to even warm liquid it immediately reacts resulting in powder clumps that are unappetizing to the palette. stir into cold first always.
blend: this is a relatively smooth sauce. so that’s why you see a lot of recipes using a lot of powders like garlic or ginger instead of the fresh stuff. so since I’m using the blender to blend the garlic smooth. instead of mincing with a knife, I tossed in all my fresh ingredients with it to do the chopping for me. black garlic is sticky that’s why i head straight to the blender with it for this recipe.

- 2 Black Garlic Cloves, whole
- 1/2c Water
- 1/3c Soy Sauce
- 1/4tsp Sesame Oil
- 1/2tsp Ginger, fresh
- 1c Water, cool +1Tb Cornstarch
- 2Tb Brown Sugar
- 1Tb Honey
- Blend together black garlic, ginger and 1/2c water. Blend for 20 seconds till smooth.
- Add contents of blender into a sauce pot. Along with remainder of ingredients
- Remember to combine the cup of water with cornstarch prior to adding to the stove.
- Bring to a boil and simmer for 15 minutes till sauce has thickened and can coat the back of spoon.
- Remove from the heat. Serve with meats, veggies or noodles. Refrigerate and store for later use.
