tofu prep: tofu absorbs everything that’s what makes it so great. to prep your tofu. remove and drain it from the package place it top and bottom with a paper towel and place a plate on top of it to add a little pressure. let it sit for 15 minutes to remove the moisture. cube the tofu prior to adding the marinade. toss gently so you don’t break it up.
veggie prep: for a good stir fry it’s all about timing. you want your vegetables lightly fried and colored while maintaining a crispy bite. to achieve that a hot pan and consistent knife cuts are key. make sure the carrots and cabbages are a thin julienne to get them in and out of the pan. any additional vegetables need to be around the same size
the sauce: with a lot of cooking and Asian cooking in particular the sauce pretty much starts with the fried veggies in the beginning.
