Fresh cranberries simmered simply with sugar to make a sweet sticky syrup thickened with crunchy chia seeds.
Once I start seeing cranberries pop up I just can’t help myself. I love stocking up and freezing for quick and easy jam or pie filling. When I get cranberries from the store I toss them straight in the freezer. They last longer, they come in the perfect bag and as long as they haven’t been smashed up they freeze perfectly.
This bag of cranberries lasted about two days before pulling it out from the freezer. I decided I wanted to make a really tart jam. I love the dark color of the jam it really helps me get ready for cooler weather. I decided to chia seeds because I love the look of the dark seeds with burgundy berries. The slight crunch it gives is a plus and it’s a great no-fuss healthy thickener. Check out my tips and tricks below for the best cranberry chia jam. TIPS & TRICKS FOR THE BEST CRANBERRY CHIA JAM
heat off’; chia last: chia is a great thickener. it gels and tightens when introduced to liquid. add in heat and it gels in minutes. aside from retaining as much nutritional value as possible don’t cook your chia at all. add the chia in once the jam is removed from the heat. this will be the easiest time to incorporate the chia thoroughly.
chia: don’t expect the chia to break down in the jam. the beads will add a nice crunch to the mix. add as much chia as you’d like but be warned it can really stiffen a jam. if you’re unsure about the tightness start at one tablespoon and go from there.
simmer: to break down the cranberries you need a steady and consistent simmer. simmering ensures they start to release their own liquid without burning on the bottom. stir with a wooden spoon periodically.
sugar varies: start off low with the sugar while the berries break down. i don’t like to start my jam thickening too soon. i add enough sugar to help the breakdown and give it initial flavor. once the cranberries are soft and it’s time to build is when i adjust the sugar. for this recipe, you may want more sugar since i don’t like anything too particularly sweet. increase in increments of half a cup.
