How did this recipe come to be 

I left the freezer open and ruined 3 brand new half gallon containers. The freezer wasn’t warm. It was just left open, so the ice cream was okay to eat. However, it wouldn’t be enjoyable for its intended purpose. I figured I can either re-spin the ice cream with cream for shakes or use it. I hate dedicating freezer space to melted ice cream so I decided to use it. I know others have been in this situation. I wish I used this every time our freezer went out during hurricane season. 

Can i just substitute the ice cream for the milk exactly 

Ice cream is thicker than milk or water. Therefore, you can’t substitute it directly into your pancake batter at a 1:1 ratio. To account for the ice cream’s viscosity, reduce the overall pancake mix by one-quarter. If you prefer, you can thin out the ice cream with a little milk. This is helpful if you like a thinner pancake. 

Can I do this with scratch made batter

Pancake mix is ideal for ice cream pancakes due to its convenience. It simplifies preparation, eliminating the need to measure individual dry ingredients like flour, sugar, baking powder, and salt. This saves time, reduces error potential, and offers consistent results, providing a stable base for experimenting with ice cream flavors.

Can i make this recipe with freezer burned ice cream

The problem with freezer burned ice cream is that it is usually melted. It is also exposed to air in the freezer. Often times, freezer burned things taste like what they are exposed to. You can technically use that ice cream for this recipe if you’re sure the ice cream hasn’t become warmed. You need to sample the melted ice cream. If it tastes like anything other than the intended ice cream flavor, it is not salvageable. It needs to be disposed of.

Ingredients
  

  • 4 cups vanilla ice cream melted
  • 1.5-2 cups pancake mix such as Krusteaz Buttermilk Pancake mix
  • 1 tablespoon vanilla extract
  • 4 tablespoons butter

Method
 

  1. Whisk the melted ice cream until smooth.
  2. Stir in the vanilla extract and pancake mix until just combined.
  3. Heat a griddle over medium-low heat.
  4. Melt the butter on the griddle.
  5. Using an ice cream scoop, pour portions of batter onto the griddle, ensuring not to overcrowd the pan.
  6. Cook until the edges begin to brown and bubbles form, then flip and cook the other side.
