INGREDIENTS

  • 1 block extra-firm tofu, drained and crumbled
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • ½ teaspoon cumin
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 eggs, scrambled
  • 4 corn tortillas
  • Onions, cilantro and green sauce for serving

INSTRUCTIONS

  • In a large bowl, combine the tofu, chili powder, garlic powder, onion powder, oregano, cumin, and black pepper. Toss to coat.
  • Heat the olive oil in a large skillet over medium-high heat. Add the tofu and cook, stirring frequently, until browned and crispy on all sides.
  • Add the eggs to the skillet and cook, stirring frequently, until scrambled.
  • Warm the tortillas in a skillet or on a griddle until hot and pliable.
  • Fill each tortilla with the tofu chorizo, eggs, cilantro, green sauce and onions

To make the tofu chorizo ahead of time, simply cook it according to the directions and then store it in an airtight container in the refrigerator for up to 3 days. When you’re ready to serve, reheat it in a skillet until warm. If you don’t have any extra-firm tofu on hand, you can also use firm tofu. Just be sure to press it well to remove as much moisture as possible before crumbling it. This tofu chorizo is a great way to add protein to your meals.
