I love to throw chicken and veggies on the grill. It adds some major flavor and it’s the missing touch that makes you feel like you’re making restaurant-quality dishes at home. The grill not only offers convenience and a bigger work area but an open flame. Cooking over an open flame is what gives your food beautiful grill marks and what transports you to your favorite restaurant. Flame cooking is nothing to be scared of and using simpler cuts like chicken will have you grilling like a pro in no time.
Today I kept it simple. Chicken marinated in a spiced beer rub, Some plain veggies tossed in oil and seasoned with salt and pepper. From there we have plenty of options we can do wraps, tacos, sandwiches, or bowls. Serve it up with your favorite condiments and dips and you’ll have dinner in an hour. TIPS & TRICKS FOR THE BEST GRILLED CHICKEN AND VEGGIES
quick marinade: this marinade is really quick. It’s really just to give the spice something to stick to so don’t drown it in beer. you’ll be basting in beer, later on, to really enhance the flavor.
edible basters: for this recipe, you’ll be making a cilantro lime beer butter. skip the baster for this step and use a whole bunch of cilantro to paint the chicken. the cilantro adds flavor to the dish. and you can toss it on the grill to cook after you’re done.
hot grill: for the best results make sure your grill and the racks are hot. that way you get immediate grill marks. watch your chicken make sure it doesn’t cook too quickly and only flip the chicken once it’s released from the grill.
grill everything: for this recipe, the grill is the main tool for cooking so use it. I like to add whatever veggies I have on hand and then some. I also like to throw my citrus on that way it makes it juicier and slightly smokier.
