Adding cornbread mix completely solved this issue. The leavening agents in the mix allow the turkey meatloaf to expand, filling out the corners of the pan and creating a perfect domed top. Using a loaf pan also provides essential support, holding the structure intact until the meatloaf is cooked through.

Beets For Color

Since ground turkey tends to stay pale when cooked, adding beets is a great way to deepen its color and boost nutrition without lengthening the cooking process. Canned beets are ideal because they are already steamed and soft. Instead of dicing or mincing them, mash the beets into a smooth paste using the flat side of a knife. This allows them to melt seamlessly directly into the turkey meat, imparting a rich, vibrant hue with minimal effort.

Mix Gently

Combine the ingredients only until everything is evenly incorporated. Overmixing compresses the meat and can result in a firmer, denser meatloaf instead of one that is tender and juicy.

Ingredients
  

  • 3 pounds ground turkey
  • 1 package 8.5oz honey cornbread mix
  • 3 large eggs
  • cup milk
  • 1 Tb Beets canned in water, paste
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 2 teaspoons sea salt
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic powder
  • 1 celery stalk finely minced
  • ½ poblano pepper finely minced
  • 2 green onions finely minced

  • ¼ cup butter melted
  • 2 tablespoons honey
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried thyme

Method
 

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Line a loaf pan or baking dish with parchment paper or aluminum foil, leaving enough overhang on the sides to easily lift the finished meatloaf out after baking.
  3. Add the ground turkey to a large mixing bowl. Sprinkle in the cornbread mix, then add the beet paste, eggs, milk, cayenne pepper, thyme, sea salt, Dijon mustard, Worcestershire sauce, garlic powder, minced celery, poblano pepper, and green onions.
  4. Mix everything together until just combined. Avoid overmixing to keep the meatloaf tender.
  5. Transfer the mixture into the prepared pan. Press it into an even loaf and gently tap the pan on the counter to remove any large air pockets.
  6. If your oven has a rack directly above the meatloaf, remove it to allow room for the loaf to rise slightly while baking.
  7. Bake for 40-50 minutes or until the internal temperature reaches 165 degrees Fahrenheit.
  8. While the meatloaf bakes, whisk together the melted butter, honey, cayenne pepper, and thyme until smooth. Brush or pour the warm honey butter glaze evenly over the hot meatloaf before slicing and serving.
  9. Remove the meatloaf from the oven and let it rest for about 10 minutes.
