Chocolate Lava Center French Toast

This rich chocolate french toast turns a classic breakfast into an indulgent comfort food treat. Slices of white bread are soaked in a cocoa and espresso french toast batter, filled with melted chocolate chips, then finished in the oven for a warm, gooey lava-style center. Serve it warm with butter, olive oil, and a sprinkle of flaky sea salt.

Featured Standouts

White Bread

White bread gives this French toast its soft, familiar texture while soaking up the chocolate custard. Its mild flavor also lets the cocoa and melted chocolate stand out without competing with them. Choose slices that are sturdy enough to handle soaking and filling without falling apart.

Chocolate Chips

Chocolate chips create the gooey lava center that makes this French toast different from a standard chocolate French toast. As they melt in the oven, they create a rich chocolate pocket inside the bread that stays soft and spoonable when served warm.

Cocoa Powder

Cocoa powder builds the chocolate flavor directly into the French toast batter, giving the outside of the bread a deep chocolate color and rich cocoa taste. It also keeps the chocolate flavor present throughout the French toast instead of relying only on the filling.

Espresso Powder

Espresso powder is optional, but it gives the chocolate a deeper, more intense flavor. You do not need much because its purpose is to enhance the cocoa rather than make the French toast taste like coffee. It is especially useful when you want a darker, more bittersweet chocolate profile.

Half and Half

Half and half gives the egg mixture a richer, creamier consistency than milk while still being light enough to soak into the bread. It helps create that soft, custardy texture inside while the exterior develops a lightly crisp, browned surface in the skillet.

TIPS & TRICKS FOR THE BEST CHOCOLATE LAVA CENTER FRENCH TOAST

Choose bread that can handle the filling

The bread needs to be soft enough to absorb the chocolate custard but sturdy enough to hold the chocolate inside. Thick slices of white bread work especially well because they create enough space for the melted center without becoming difficult to cook.

Do not rush the soaking time

After dipping the bread, give it about 10 minutes to absorb the batter. This allows the chocolate custard to work its way into the bread instead of leaving the outside heavily coated while the middle stays dry.

Keep the chocolate away from the edges

Place the chocolate in the center of the bread rather than spreading it across the entire slice. Leaving a border around the outside gives you room to press the bread together and helps keep the melted chocolate contained while it cooks. You want the chocolate pocket enclosed, but avoid crushing the bread. Gently press around the perimeter after adding the chocolate to create a seal. If the edges are compressed too aggressively, the bread can become thin and the filling may escape during cooking.

Watch your skillet temperature

Medium-low heat is important because the cocoa in the batter can darken quickly. The goal is a browned exterior, not a deeply toasted or burnt crust. If the bread is browning before it has had time to cook through, lower the heat. Cook each side for about 3 minutes before moving the French toast. Letting the bread sit undisturbed helps develop a golden chocolate crust and makes it easier to flip without disturbing the filling.

The oven finishes the lava center

The skillet cooks and browns the outside, but the oven gives the chocolate center time to fully melt. The 300°F finish is gentle enough to warm the filling without requiring the outside to stay on the skillet long enough to burn. The chocolate may still look firm when the French toast first comes out of the oven. Give it a moment before cutting into it. The residual heat continues warming the center, helping the chocolate become softer and more fluid.

Serve it while it is warm

This French toast is designed around the contrast between the warm, tender bread and the melted chocolate center. Serve it soon after baking for the best lava effect. If it sits too long, the chocolate will begin to thicken again.

Inclusive adaptions

Easier handling

Use a wide, shallow bowl for dipping and a spatula with a larger surface area to make transferring the soaked bread easier for people with limited grip or hand strength.

Texture sensitivity

Use a smooth chocolate filling instead of chocolate chips if the contrast between soft bread and whole chocolate pieces is uncomfortable.

Food sensitivity

Use a dairy-free half and half and dairy-free butter and chocolate chips for a dairy-sensitive adaptation. Choose gluten-free white bread if gluten is also a concern.
